Yam & Tomato in Mango Peanut Sauce
My lunch creation- one Japanese yam (dark outside, white inside) and one tomato, chopped into bite-sized pieces, sautéed in enough coconut oil to cover the bottom of the pan. Sauce is 2 tablespoons crunchy peanut butter, 3 tablespoons mango chutney, and a few good squirts of Bragg liquid aminos. Mixed with brown rice and topped with sesame seeds. Very tasty!
